Ultrasound testing for tenderness and marbling

Because we ultrasound test live animals, we know which ones will be the most tender and marbled, which we then select for our Diamond F Brand Beef program. It is the very same technolgy that is used on pregnant women to get a picture of the fetus.

Breeding

Our base herd is Hereford, Red Angus, and Shorthorn cross, and lately we have been using a breed of bulls called Irish Blacks.

The Irish Black (or Beef Fresien) breed is known for very tender and marbled meat with very little edge fat. We've been very pleased with the meat from these bulls, and indeed it is very tender and marbled, with very little edge fat. Before we had the meat from the Irish black bulls, I had never seen such wonderful and tender meat with so little edge fat.

Maintaining herd health

We maintain herd health through proper nutrion and grazing management. Cattle raised in a wholesome manner, generally don't get sick. We utilize the principles of Holistic Management to keep our cattle, pastures, and meadows vibrant and healthy.

We use any number of alternative treatments such as homeopathics, diatomaceous earth for parasite control, and colloidal silver, among others.

While we maintain the ability to use antibiotics or pharmaceuticals as a last resort, any animals that have been treated are withdrawn from the Diamond F Program and never sold as Diamond F Brand Beef.

Beef packaging

Diamond F Brand Beef comes in vacuum-sealed packages, with one steak per package, and one roast per package. Hamburger comes in tubes of 1.5 pounds.

Grass fed southwestern

We also offer excellent Tamales and Burritos, made here in the San Luis Valley with our premium grass fed beef. Convenience was never so healthy and delicious. Tamales come frozen, in 6-packs.
