Low Carb Faux Mashed Potatoes

Faux mashed potatoes are the perfect compliment to your roasted meats, stews, or steaks. Get all the flavor and comforting goodness without all the carbs.

Melissa's Faux Mashed Potatoes
For a low glycemic meal.
Name: Melissa's Faux Mashed Potatoes
Description: A low-carb alternative to mashed potatoes
Ingredients:
  • 1 Head fresh, organic cauliflower
  • 3 Tbs. Butter (ideally from grass fed dairy)***
  • 1/4 Cup Whole Milk (ideally from grass fed dairy)***
  • Salt and pepper to taste

Directions: Steam cauliflower thoroughly

Place cauliflower in a food processor or blender with enough milk to make it easy to blend / process.

Transfer to sauce pan

Place on low-medium heat, add remaining milk and butter to desired consistency. (Exact portions will depend on the amount of cauliflower you are using).

Whip until light and fluffy.

Season to taste as you would mashed potatoes.

Serve with your favorite gravy or sauce, or add finely chopped roasted garlic for "garlic mashed potatoes".
