Old Fashioned Beef Stew
Compiled from many grandmothers.
Name: Old Fashioned Beef Stew
Description: Hearty and delicious, nothing satisfies in the winter like beef stew
Ingredients:
  • 2 Pounds Stew Meat
  • 1/2 Cup Whole spelt flour
  • Salt and pepper to taste
  • 1 Tsp onion powder
  • 1 Tsp garlic powder
  • 2 Cup pearl onions, (if not available use shallots or chopped onion)
  • 1/4 Cup olive oil***
  • 5 Medium Potatoes cubed 1 inch
  • 6 Medium carrots sliced 1/2 inch
  • 5 Stocks Celery sliced 1/2 inch
  • 3 Pints Homemade beef stock


***The really old fashioned recipe calls for using bacon grease or drippings rather than olive oil, however I would only recommend that if you have access to wholesomely raised, pastured pork, free of added hormones and antibiotics, that wasn't raised in confinement. If you do have access to such pork I highly recommend you use the bacon drippings rather than the olive oil.
Directions:
  • Pat stew meat dry with paper towel
  • Mix together flour, salt, pepper, onion powder, and garlic powder in a large bowl.
  • Add stew meat and mix until meat is thoroughly coated.
  • Heat olive oil in large pot to medium high
  • Brown the meat in the hot oil
  • Remove browned meat until all meat is browned and set aside
  • Reduce heat to medium and add onions
  • Add potatoes, carrots, celery, and browned meat
  • Add beef stock and bring to a boil
  • Reduce heat to low, cover, and let simmer for a minimum of 2 hours but 4 or more is preferable to make the meat tender
  • If desired, thicken with additional flour
