So you can get the best grass fed beef
Every year we ultrasound scan our cattle to determine the carcass qualities of each particular steer. We can check for tenderness, marbling, size of the rib eye muscle, and the stress level of the animal. (BTW - over 98% of our cattle receive the lowest possible stress score, a definitive indicator of how our cattle are handled and loved).
This is the very same technology that is used on pregnant women to take a look at the fetus inside. In our case we use the technology to look at the muscles around the T-11 and T-12 ribs.
Only the steers with the best ultrasound scores will become Diamond F Brand 100% grass fed beef.
