Grass fed beef cube steak: A new twist on a childhood memory
The most affordable cut of steak is back! Boomers, do you remember cube steaks? Apparently the cube steak has made a resurgence in our current economic downturn, and sales are up substantially, compared to overall beef sales, according to an article in the New York Times. We've been offering the "cube steak" without even knowing it. A cube steak is nothing more than mechanically tenderized cuts of steak like Round Steak or Sirloin tip steak. The word "cube" describes the way the steak is hashed by the tenderizer
The meat doesn't come from cube shaped cattle, nor is the steak in the shape of a cube. The mechanical tenderizer creates slashes in the steak that makes it contain lots of tiny little cubes of meat within the steak. Because Round Steak is one of the tougher cuts of steak, mechanically tenderizing it gives consumers the opportunity to enjoy great steak flavor, that's easy to cut and chew, at an affordable price.
