Grass Fed Beef Whole Tenderloin Recipe

Our Diamond F Brand Whole Beef Tenderloin recipe is so simple and easy, but yet one of the most elegant and sophisticated dishes you will ever serve.

Follow the recipe below and be prepared to wow everyone at the table.

All you need is a grill, a meat thermometer, a wire rack, and a roasting pan.

Whole Beef Tenderloin
The Crème de la Crème of meat.
Name: Whole Beef Tenderloin
Description: The most elegant of holiday meals, Whole Tenderloin can't be beat
Ingredients:
Directions:
  • Rub entire Tenderloin with olive oil
  • Rub in salt and pepper to taste
  • Sear the tenderloin on 3 sperate sides on a med-hot grill (imagine the cross section of a temderloin as a triangle, searing each side of the triangle), creating a nice, dark, outer crust on all three sides
  • Do not sear any longer than is necessary to produce a dark, crispy crust (No more than 3 minutes per side)
  • Place seared roast on wire rack in open roasting pan and into a 425 degree F oven
  • After 15 minutes in the oven, check the temperature of the center core of the meat with a meat thermometer to see if it has reached 135 degrees F
  • Continue checking until the core reaches 135 degrees F
  • When the center core of the tenderloin reaches 135 degrees F remove roasting pan from oven and place on cooling rack. This will yield a rare to medium rare center with more done-ness towards the outsides


Medium rare occurs at 140oF, but the roast continues to cook after it is removed from the oven, so we take it out when the core reaches 135oF. If you like it very rare, then consider taking the roast out when the core reaches 130oF.
