Mike's Green Chile can warm you up on the coldest nights
It doesn't get any heartier Mike makes incredible green chile, but like me, he doesn't do cooking for engineers. It was hard to pin him down on exact measurements for this recipe as he usually just starts adding ingredients. Vary this recipe according to your own tastes.
Green Chile Stew

- 1 Tube Diamond F Brand Grass Fed Ground Beef
- 6 Cups roasted and peeled green chiles chopped
- 2 Medium onions finely diced
- 2 Cloves garlic finely diced
- 5 Cups liquid (water or preferrably homemade chicken stock)*
- 2 TBS. Powdered cumin
- 1/4 Tsp. Oregano
- 3 TBS. Olive oil
- Salt and pepper to taste
- 3 TBS. Flour (optional)

| Directions: |
- Sautee onions and garlic in olive oil
- Add ground beef stirring frequently until meat is browned
- Add chiles, mixing thoroughly
- Add cumin, oregano, salt and pepper
- Add flour if thick consistency is desired
- Add liquid
- Bring to a boil
- Reduce to simmer and simmer for at least an hour
Depending on whether you want a stew-like or a soup-like consisteny you can thicken with flour or not. |

*We prefer to use homemade chicken stock for the liquid and recommend you do the same. However, if you don't have homemade, we strongly encourage you to not use commercial chicken stock, as it is usually full of MSG, which can be disguised as: Natural Flavors, hydrodlyzed soy protein, or hydrolyzed vegetable protein. Even stock that claims to be organic or natural often has MSG. Also beware of the "no added MSG" claim, as some of the pre-made components may contain MSG.
