Chipotle Sweet Potatoes
Filed Under Celebration, Home food prep
For Thanksgiving our daughter, Kelly, made the most fabulous Chipotle Sweet Potatoes. Mike raved about them on Facebook, and within hours several people had asked for the recipe.
I wish one of us could take credit for it, but truthfully this recipe came from the www.foodnetwork.com website.
Here is the recipe:
Ingredients
- 3 Medium sweet potatoes, peeled and slice 1/8 inch thick
- 2 Cups Heavy Cream
- 1 Heaping Tbs. Chipotle pepper puree
- Salt & Pepper to taste
- Chile powder & Garlic powder to taste
Instrutions
Whisk heavy cream and chipotle puree until smooth.
In a buttered baking dish Layer 1/3 of the sweet potatoes. Sprinkle with salt, pepper, chile powder and garlic powder to taste. Pour about 1/2 cup of the heavy cream mixture over the potatoes.
Use the remaining sweet potatoes to create 3 more layers, and repeat the above steps on each layer.
Cover the potatoes and bake for 30 minutes at 350. Uncover and continue baking for about 45 minutes, or until the top is brown and bubbly.
Enjoy
We hope you enjoy this recipe as much as we do! Have a happy, healthy, and safe holiday season.
