<p><strong>Sirloin</strong></p>
<p>To me, the <a title="Grass fed beef sirloin steak special" href="http://www.grassfedandhealthy.com/products/item59.cfm" target="_blank">sirloin steak</a> is the most flavorful of all the steaks. It has good rich fat and marbling, and is delicious, though it is not as tender as a New York Strip Steak, Rib Eye, or Filet Mignon.</p>
<p><a href="http://www.grassfedandhealthy.com/Grass-Fed-Blog/wp-content/uploads/2011/04/grilled-steak-web-size.jpg"><img class="alignleft size-full wp-image-711" title="Grilled grass fed Sirloin Steak" src="http://www.grassfedandhealthy.com/Grass-Fed-Blog/wp-content/uploads/2011/04/grilled-steak-web-size.jpg" alt="Grilled grass fed Sirloin Steak" width="144" height="142" /></a>Though not quite as tender as the steaks mentioned above, <a title="Grass fed beef sirloin steak special" href="http://www.grassfedandhealthy.com/products/item59.cfm" target="_blank">Sirloin Steaks</a> are still tender enough to be enjoyable grilled plain, without the need for marinade. (Though they&#8217;re fabulous marinated too). Because they&#8217;re so yummy, and tender enough, the <a title="Grass fed beef sirloin steak special" href="http://www.grassfedandhealthy.com/products/item59.cfm" target="_blank">Sirloin</a> is my preferred steak. <p><strong>Chuck</strong></p>
<p>I think that the <a title="Grass fed beef chuck roast" href="http://www.grassfedandhealthy.com/products/item32.cfm" target="_blank">Chuck Roast</a> is the hands down, THE most flavorful cut of beef on the entire carcass, though one of the toughest. But when you <a title="Slow cooked roast" href="http://www.grassfedandhealthy.com/public/117.cfm?sd=74" target="_blank">slow cook a chuck roast</a> (which takes almost NO effort), it becomes fork tender with exquisite, savory flavor, texture, and aroma.</p>
<p>While it&#8217;s wonderful to &#8220;sink your teeth&#8221; into a juicy grass fed beef <a title="Grass fed beef New York Strip steak" href="http://www.grassfedandhealthy.com/products/item2.cfm" target="_blank">New York Strip Steak</a> or Rib Eye now and then, I&#8217;m just as happy eating <a title="Grass fed sirloin steak special" href="http://www.grassfedandhealthy.com/products/item59.cfm" target="_blank">Sirloins</a> and slow cooked <a title="Grass fed beef chuck roast" href="http://www.grassfedandhealthy.com/products/item32.cfm" target="_blank">Chuck Roast</a>.</p>

<p>I just wanted to counter that by saying that with a little bit of planning and preparation you can eat grass fed beef and organic produce, even on a tight budget. No, you won&#8217;t be grilling grass fed <a title="Grass fed beef New York Strip Steak" href="http://www.grassfedandhealthy.com/products/item2.cfm" target="_blank">New York Strip Steaks</a>, but with inexpensive cuts like our <a title="Grass fed beef soup bones" href="http://www.grassfedandhealthy.com/products/item58.cfm" target="_blank">meaty grass fed beef Soup Bones</a>, you can easily delight the whole family and feel good about the health benefits you&#8217;re providing.</p>
<p>Last week I made a pot of soup from one of our Shank <a title="Grass fed beef soup bones special" href="http://www.grassfedandhealthy.com/products/item58.cfm" target="_blank">Soup Bones</a>, and one pound of our <a title="Grass fed beef ground chuck" href="http://www.grassfedandhealthy.com/products/item50.cfm" target="_blank">Ground Chuck</a> (which isn&#8217;t necessary because our <a title="Grass fed beef soup bones" href="http://www.grassfedandhealthy.com/products/item58.cfm" target="_blank">Soup Bones </a>are so meaty, but we already had the <a title="Grass fed beef ground chuck" href="http://www.grassfedandhealthy.com/products/item50.cfm" target="_blank">Ground Chuck</a> thawed), along with all organic; onions, garlic, celery, carrots, mushrooms (expensive shitake mushrooms - you can use the less expensive white button variety), kale, broccoli, and frozen peas. I of course also added some sea salt, pepper, rosemary, thyme, and celery seed. (Normally I would have added a little red wine but we didn&#8217;t have any on hand that day). And of course I used a few tablespoons of extra virgin, organic olive oil in which to sauté the vegetables.</p>
<p>I totaled up the cost of all the ingredients, including the retail price of our <a title="Grass fed beef soup bones special" href="http://www.grassfedandhealthy.com/products/item58.cfm" target="_blank">Soup Bones</a> and <a title="Grass fed beef ground chuck" href="http://www.grassfedandhealthy.com/products/item50.cfm" target="_blank">Ground Chuck</a>, and figured that the entire pot cost about $25.00 to make, and it yielded a full 15 man-sized servings. (We&#8217;re talking big man). That comes to $1.67 per serving for a filling, fulfilling, and delicious meal that provides all the nutrients you need for an active and busy lifestyle.</p>

<p>The most dangerous of the guidelines is the one pushing an increase of the use of liquid vegetable oils like corn and soy, which are known to be detrimental to health. <p>Here is the exact recommendation from the <a href="http://www.cnpp.usda.gov/DGAs2010-PolicyDocument.htm" target="_blank">guidelines</a>:</p>
<ul>
<li>&#8220;Consume less than 10 percent of calories from saturated fatty acids by replacing them with monounsaturated and polyunsaturated fatty acids.&#8221;</li>
</ul>

Most people resolve to change behavior in some way, that they really don&#8217;t want to do, and so put it off until January then make a half hearted attempt to change, which usually ends in failure.</p>
<p>This year resolve to improve your health with enjoyable changes that are easy to implement, rather than depriving yourself of something you enjoy or forcing yourself to do something you don&#8217;t want to do.</p>
<p><strong>Good Animal Protein</strong></p>
<p>If you&#8217;re reading this blog, you probably already enjoy and know about the health benefits of eating grass fed beef. Well, it&#8217;s easy enough to eat more of it. That&#8217;s a no-brainer for improved health via maximum enjoyment, whether you prefer <a title="Grass Fed Steaks" href="http://www.grassfedandhealthy.com/products/department9.cfm" target="_blank">steaks</a>, <a title="Grass Fed Beef Roasts" href="http://www.grassfedandhealthy.com/products/department11.cfm" target="_blank">roasts</a>, <a title="Grass Fed Beef Hamburger" href="http://www.grassfedandhealthy.com/products/department8.cfm" target="_blank">hamburger</a>, <a title="Grass Fed Beef Jerky" href="http://www.grassfedandhealthy.com/products/item62.cfm" target="_blank">jerky</a>, <a title="Grass Fed Beef Sticks" href="http://www.grassfedandhealthy.com/products/item64.cfm" target="_blank">beef sticks</a>, or <a title="Grass Fed Beef Tamales and Burritos" href="http://www.grassfedandhealthy.com/products/department3.cfm" target="_blank">tamales and burritos</a>.</p>
<p>The same holds true for the other high quality fats and proteins you love, like pastured poultry or <a title="Wild caught Alaska Salmon" href="http://www.grassfedandhealthy.com/products/item73.cfm" target="_blank">wild caught Alaska salmon</a> or <a href="http://www.grassfedandhealthy.com/products/item74.cfm" target="_blank">halibut</a>. Resolve to eat more of those foods in 2011 and reap the rewards of enjoyment and improved health.</p>
<p><strong>Good Fat</strong></p>
<p>Do you have any kind of vegetable oil in your pantry? Get rid of it now, and resolve to eat healthier fats. Throw away the corn, soy, or vegetable oil and replace it with olive oil, grass fed butter (preferably raw), coconut oil, grass fed beef tallow, or pastured lard. If you aren&#8217;t allergic to nuts, you might enjoy sweet almond oil as well, though it is expensive.</p>
<p><strong>Exercise</strong></p>
<p>One of the most common New Year&#8217;s resolutions is to get more exercise, and that is a worthwhile objective. But don&#8217;t buy that gym membership just yet. Resolve to dance more! Put on your favorite rockers for a half hour to an hour a day and shake your sacrum. Dance is the archetypal expression of human joy. They go together, perhaps more dancing can bring about more joy!</p>
<p>If you sit at a computer for a substantial amount of time resolve to sit on a therapy ball rather than a chair. That way you continue moving throughout the day and exercise your core muscles while you&#8217;re working, and the body just feels better than it would have just sitting in a chair all day.</p>
<p><strong>Gratitude</strong></p>
<p>Resolve to count your blessings! It&#8217;s not hard, and the more you put your awareness on what you have in your life that&#8217;s good and enjoyable the more you will find goodness and enjoyment in your life.</p>
<p>Realistic and enjoyable resolutions can help improve your health, while enhancing your life. Best of all since you are enjoying yourself, they are easy to keep.</p>
<p>Happy New Year! May 2011 be your best year ever!</p>

<p>Last summer, I was standing in our booth at the Crested butte Farmers Market when then mayor and gubernatorial candidate, John Hickenlooper, walked up to the booth and introduced himself. Of course I recognized him right away and introduced myself. We talked for quite a while and I was impressed with his understanding of Colorado&#8217;s rural issues, and thoroughly enjoyed our conversation.</p>
<p>I fully appreciated the amount of time he spent talking to me, and told him that he already had my vote, and didn&#8217;t have to say anything to sway me in his favor. When we said our goodbyes he told me that if he won the election he would serve our beef at his inaugural dinner.</p>
<p>Well, he stayed true to his word, and today we are delivering 184 pounds of Diamond F Brand Beef Brisket to Denver for the dinner on the 11<sup>th</sup>.</p>
<p><strong>Keeping it Colorado</strong></p>
<p>In the interest of frugality, the Governor and Lieutenant Governor will not be having a fancy and expensive sit down dinner in a hotel ballroom. Instead, <a href="http://www.kktv.com/news/headlines/Hickenlooper_Will_Serve_BBQ_At_Inaugural_Dinner_111601434.html" target="_blank">Colorado BBQ Beef Brisket</a> and green chile mac &amp; cheese will be featured in conjunction with Colorado beer (If you can imagine) at the Fillmore Auditorium. Leave the tuxes and evening gowns at home.</p>
<p><span style="font-family: Times New Roman; font-size: small;">Tickets to the dinner are $100 each and after the costs for the dinner are paid, the remainder will go to selected charities. </span></p>
<p class="MsoNormal" style="margin: 0in 0in 0pt;"><span style="font-family: Times New Roman; font-size: small;">I am really looking forward to this new governor&#8217;s administration. I think he was a great mayor of Denver, and think he will make a great governor.</span></p>

			<content:encoded><![CDATA[<p>For Thanksgiving our daughter, Kelly, made the most fabulous Chipotle Sweet Potatoes. Mike raved about them on Facebook, and within hours several people had asked for the recipe.</p>
<p>I wish one of us could take credit for it, but truthfully this recipe came from the <a href="http://www.foodnetwork.com">www.foodnetwork.com</a> website.</p>
<p>Here is the recipe:</p>
<p><strong>Ingredients</strong></p>
<ul>
<li>3 Medium sweet potatoes, peeled and slice 1/8 inch thick</li>
<li>2 Cups Heavy Cream</li>
<li>1 Heaping Tbs. Chipotle pepper puree</li>
<li>Salt &amp; Pepper to taste</li>
<li>Chile powder &amp; Garlic powder to taste</li>
</ul>
<div><span lang="EN"><strong>Instrutions</strong></span></div>
<div><span lang="EN">Whisk heavy cream and chipotle puree until smooth.</span></div>
<div><span lang="EN">In a buttered baking dish Layer 1/3 of the sweet potatoes. Sprinkle with salt, pepper, chile powder and garlic powder to taste. Pour about 1/2 cup of the heavy cream mixture over the potatoes.</span></div>
<div><span lang="EN">Use the remaining sweet potatoes to create 3 more layers, and repeat the above steps on each layer.</span></div>
<p><span lang="EN">Cover the potatoes and bake for 30 minutes at 350. Uncover and continue baking for about 45 minutes, or until the top is brown and bubbly.</p>
